The evolution of kitchens during the Middle Ages and the Renaissance is a fascinating topic that has barely been studied in the specialized literature. Through these historical times there have been great changes due to new sociopolitical scenarios and the invention and development of new technological system, such as the chimney.

“En cualquier caso, tanto las referencias documentales —la crónica de un terremoto de 1284 en Venecia habla, por ejemplo, de los muchos camini que derribó el temblor— como los testimonios literarios —en el Roman de la rose, de 1250, ya se describe poéticamente el humo que sale de las cheminées —, así como algunas imágenes que representan artefactos muy similares a los actuales —tal una ingenua miniatura del manuscrito británico del Romance of Alexander — y por supuesto los muchos restos arqueológicos que se han conservado, sugieren que, desde el siglo XII, y probablemente antes, las chimeneas eran artefactos frecuentes en Europa”.
